It has anti-inflammatory properties which is so important for reducing inflammation in the arteries. Sweet potatoes, although a starchy vegetable, have a lower GI than a normal potato and are higher in nutrients. Having a low GI means that it creates a steady rise in blood sugar meaning more energy. Its colour also means it contains beta carotene (antioxidant) which is converted into vitamin A. This in turn slows down the aging process and can reduce the risk of some cancer.
