Homemade baked beans
For most people, baked beans are a staple in their diet whether this be with toast or a jacket potato. Beans are an important source of fiber as well as being a plant source of protein and even a vegetable. Not only do they have great nutritious factors, they are inexpensive and can be used in all types of meals. For example, bulking out a nice Mexican chilli! So, here is my baked bean recipe with no artificial flavours or sweeteners, just good wholesome ingredients!
Serves 1
Ingredients
Drizzle of olive oil
1/2 red onion
1/2 tin chopped tomatoes
1/2 tin beans of choice (I used cannellini)
1/2 tbsp maple syrup
1/2 tbsp balsamic vinegar
Pinch black pepper
Pinch Himalayan/rock salt
To make
Firstly prepare all ingredients (chop the onion, etc)
Drizzle a frying pan with olive oil and put on a medium/high heat. Fry the onion until they are soft and have lost their colour.
Pour in the chopped tomatoes and keep on a high heat. By doing this you are helping the tomatoes to reduce quickly (perfect if you're in a rush!).
Once they have reduced slightly, pour in the beans and turn the heat down to a low/medium heat.
After 5 minutes, pour in the maple syrup, balsamic vinegar, pepper and salt and leave for a few minutes to make sure all the liquid has reduced.
This can then be served with toast, jacket potato, cheese, spinach or anything you fancy!
